Sausage Kale Quinoa Bowl

Savory protein and greens power breakfast or anytime meal.
1 lb organic grass-fed pork sausage (no sugar added)
1 cup Cooked organic quinoa
¼ cup Organic sundried tomatoes in olive oil
½ cup Organic baby bella mushrooms
1 cup Organic kale (stem removed and shredded)

Cook quinoa according to directions in a medium sauce pan.

Cook sausage in a medium-large skillet.

Once sausage is fully cooked, add the sliced mushrooms and cooked quinoa to the skillet, cook on medium heat for one minute until fully mixed.

Add the sun-dried tomatoes to the skillet and mix.

Add in fresh kale, season with salt and pepper, and turn off heat and mix. Serve with optional poached egg and/or fresh grated parmesan (dairy-free option: nutritional yeast).
